National BBQ Week 2020
This week is National BBQ Week, which was set up more than two decades ago to help increase barbecue activity throughout the UK and to get people thinking about getting BBQ-ready in early summer.

This is the 24th National BBQ Week, but of course, this year is different. We are all spending most of our time at home and the weather in the UK is being exceptionally kind to us, we currently have more opportunities to barbecue than usual and we thought we’d write up some of our favourite barbecue recipes for inspiration.

Sweet and Simple BBQ Salmon
Ingredients
- Salmon fillets – one per person
- Olive oil
- Brown sugar
- Salt and pepper
Method
- Turn on BBQ and allow to heat up to medium heat
- Brush salmon fillets with a little olive oil and sprinkle on brown sugar.
- Season with salt and pepper and put the fish on the BBQ for 10-12 minutes
- Remove salmon from the grill and serve
Alternatively, you can marinate the salmon in one of the following sauces for 30 minutes before cooking – increase quantities depending on the number of salmon fillets you are marinading.
Asian marinade
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, crushed
- 1 tbsp fresh ginger, finely chopped
Chilli marinade
- 1 tbsp olive oil
- 1 tbsp sweet chilli sauce
- 1 tbsp lime juice
- Salt and pepper
BBQ Salsa
A fresh salsa, that has the added bonus of including 8 different vegetable and herbs for gut health.
- 1 avocado, diced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 6-8 cherry tomatoes, chopped into quarters
- 1 small red onion, finely chopped
- Juice of one lime
- ½ tsp salt
- Fresh herbs, finely chopped – coriander or parsley are our favourites
BBQ Rice
Rice goes nicely alongside salmon and this BBQ rice recipe has the added advantage that it contains some vegetables, making it a healthy accompaniment.
Ingredients
- 250g long-grain brown rice
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- 1 red or yellow pepper, finely chopped
- 8-10 cherry tomatoes, chopped into quarters
- Salt and black pepper to season
- Home-made BBQ sauce (recipe below)
Method
- Cook the rice according to the instructions
- Chop all the vegetables
- Heat the onions in a pan for a few minutes
- Add the garlic, peppers and tomatoes to the pan and cook for another 2-3 minutes
- Mix the BBQ sauce in a separate bowl as per the instructions below
- Drain the rice and mix together with the vegetables and BBQ sauce
- Sprinkle a handful of chopped parsley on top and serve
Easy home-made BBQ sauce
Ingredients
- 250g homemade or shop-bought tomato sauce (passata)
- 2-3 tbsp apple cider vinegar
- 5 tbsp maple syrup or blackstrap molasses
- 1 tbsp Worcestershire sauce
- ½ tsp salt
- ½ tsp paprika
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper
Method
- Place all the ingredients and mix together whilst heating on a medium heat
- Simmer for 20 minutes
- Remove from the heat and allow to cool before storing in a jar in the fridge ready for use as required
