For the first of our winter warmer soups, we bring you a black bean soup that is full of gut-loving ingredients! We’ve got a base of bone broth (see the blog post from earlier this week for more details); fibre in the beans; anti-microbial garlic; and no fewer than 10 plant ingredients – including the toppings – to keep your microbiome happy.
There’s a DIY element to this soup that makes the meal a hit with children as well, and it’s a perfect one to batch cook and store in the freezer for those days when time is short.
Serves 4
Preparation time: 45 minutes
Ingredients
1 onion, chopped
1 clove garlic, peeled and finely chopped
2 sticks celery, sliced
1 carrot, peeled and diced
½ tsp ground cumin
½ tsp ground coriander
1 tbsp olive oil
2 tins black beans, drained and rinsed
1 tin tomatoes
1 tbsp tomato purée
250ml bone broth
250ml water
To serve: chopped avocado, fresh coriander, sour cream, grated cheese, squeeze of lime juice
Method
1. Heat the olive oil in a large pan and gently sweat the onion, garlic, celery, carrot and spices for 5 minutes or until soft.
2. Add the black beans, tinned tomatoes, tomato purée, bone broth and water and bring to a gentle boil. Reduce the heat and allow to simmer for 25 minutes. If using whole tomatoes, break any large pieces apart with a spoon.
3. Transfer to a blender, or use a stick blender to achieve a smoother consistency.
4. Serve with the suggested toppings – put them on the table in bowls and let everyone create their favourite combinations!
