It’s National Pizza Day on Wednesday, meaning we don’t need much of an excuse to enjoy pizza for dinner! However, have you tried a gluten free cauliflower pizza?
Anyone with a gluten or wheat sensitivity will know that traditional pizza bases can aggravate digestive symptoms such as bloating, pain and gas. If this sounds familiar then a cauliflower base could be the answer. It’s quick and easy to make and you can add all your favourite toppings. The only difference is that you’ll need a knife and fork to eat it!
Serves 4
Ingredients
460g cauliflower florets
100g ground almonds
60g parmesan, grated
1 egg
1 tbsp dried oregano/thyme
Method
1. Place the cauliflower florets in a food processor and pulse until they are broken down to very small pieces (similar to couscous grains).
2. Add the ground almonds, grated parmesan, egg and dried herbs of your choice and mix well.
3. Spread out thinly on a pizza stone or lined baking tray, making a slightly raised lip at the edges and bake for 20-25 minutes at 200°C.
4. Add the toppings of your choice and bake for a further 10 minutes.
