A healthy Pancake Day recipe for Shrove Tuesday

In the Christian faith, Shrove Tuesday marks the last day before the 40-day fast known as Lent, which runs between Ash Wednesday and Easter Sunday. 

Shrove Tuesday is also known as Pancake Day as it was traditionally a way of using up eggs, milk and sugar before the fasting period. 

Pancake consumption can be traced back to the ancient Greeks and Romans as far back as 5BC, when pancakes were made with rosewater and honey. Today, pancakes come in an array of flavours, with both savoury and sweet options popular around the globe. 

We’ve created a simple gut-healthy prebiotic-laden pancake recipe – so you can be sure you are looking after your gut whilst also indulging. Oats, bananas and other fruits are both full of fibre and stewed apple is particularly beneficial for gut health. Adding natural live yoghurt also contributes some friendly bacteria. 

Ingredients

2 bananas
2 eggs
½ cup rolled oats
½ tsp baking powder
Pinch of sea salt
Honey, maple syrup or coconut sugar to serve
Blueberries, raspberries, stewed apple or other fruit of your choice
Plain Greek style live yoghurt

Method

  1. In a blender, combine the peeled banana, eggs, oats, baking powder and salt.
  2. Allow the batter to stand for 10-20 minutes until slightly thickened.
  3. Heat some butter or coconut oil in a frying pan over a medium heat.
  4. Drop a large spoonful of the batter into the centre of the pan and fry until golden brown on both sides.
  5. Serve with fruit and yoghurt (add some honey, maple syrup or other natural sweetener if required – my favourite is coconut sugar).
  6. Enjoy
