It’s National Taco Day!
Ingredients
1 cup brown rice
2 tbsp olive oil
400g minced beef/turkey
1 can black beans, drained and rinsed
1 can sweetcorn, drained
3 Roma tomatoes, diced
2 avocados
Taco seasoning
1 tbsp chili powder
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp crushed red pepper flakes
¼ tsp dried oregano
½ tsp paprika
1 ½ tsp ground cumin
1 tsp sea salt
1 tsp black pepper
Method
1. Fill a large saucepan with two cups of water and cook rice according to package instructions; set aside.
2. Heat olive oil in a large pot over a medium/high heat. Add minced beef/turkey and cook until browned, stir in taco seasoning. Drain excess fat.
3. Divide rice into meal prep containers. Top with beef mixture, black beans, corn, avocado, and tomatoes.
